The vineyards and winery of COVICA are in the south of Chile --- about a 5-hour drive down the Pan-American Highway from Santiago, the capital --- in the Maule Valley. Here the soil is heavily volcanic ash, receiving ample rainfall. During the growing season the daytime temperatures can reach 37 degrees Celsius (95 degrees F.), but at night are dramatically cooled by the ocean breezes. The average age of the vines is 70 years, with some 150-year-old vines still vigorously producing.

Cabernet Sauvignon Reserve
Deep ruby red, complex, very well balanced, with a long and pleasant finish. Peaches, hints of dill, white chocolate, sweet cherries. Great with steaks and roasts --- or simply to enjoy by itself.
Malbec / Syrah
International award winner. A big Malbec balanced and rounded with a bit of Syrah. Honeysuckle, beechwood, a bit of salt. Very soft, earthy. At its very best with red meat --- ribs, wild game, lamb.
Carmenere
The signature grape of Chile. This unique dry red from old vines is sophisticated and complex, with hints of pepper and raspberry, drawing its full character from the minerality of the terroir. Soft tannins, with a long, agreeable finish. At its best when allowed to open for a long time before drinking. Excellent with beef, lamb, and pork, and with richer, spicier poultry --- e.g., Cajun dishes, tandoori chicken, coq au vin.
Merlot
Fruity, red to maroon in color. Hints of black pepper, roses. Best for pastas, ceviche, meat without heavy spice.
Heart Of Las Lomas Red Wine
Light, spicy, herby. Rather like Beaujolais. Delivers up front; refreshing. From remarkably old vines. Rounded, improving in the bottle, inexpensive. Great wine for everyday enjoyment.
Riesling
Light, enjoyable, DRY, full of Riesling aroma. Soft, elegant. Hints of pineapple, pear. Drink alone or with spicy dishes, salads, seafood, chicken. The most versatile wine --- goes well with a variety of different foods.
Sauvignon Blanc
Light, subtle. Grassy, with hints of pink grapefruit, asparagus. Long finish. Best paired with turkey, white fish. A great "patio wine" to share with friends.
Chardonnay
Light body. No oak --- fermented and aged only in stainless steel. Refreshing; hints of kiwi fruit and banana. Long aroma of fruit. Great with chicken, white fish, cheeses --- e.g., brie, provolone.
Heart Of Las Lomas White Wine
Light, herby, pleasant, and refreshing. Hint of rose petals. Delivers up front. Complements artichokes and other vegetables. A great value.

COVICA is thus one of only four wineries in the world to enjoy this distinction.

Starting in 1995, COVICA was a pioneer in making wines from organically grown grapes --- and is so certified under the exacting standards required by the Institute for Market Ecology (IMO), headquartered in Weinfelden, Switzerland. We currently offer three varietals made from organically grown grapes: Cabernet Sauvignon, Misson and Mission / Cabernet Sauvignon.
